Coconut Loaf Ingredients

300 grams Very Strong Bread Flour (Allinson Premium White) Very Strong Bread Flour (Allinson Premium White)
100 grams Strong White Bread Flour (Allinson) Strong White Bread Flour (Allinson)
1 tsp Sea Salt
125 grams Desiccated coconut
50 grams Golden Caster Sugar (Billington's) Golden Caster Sugar (Billington's)
1 sachet Easy Bake Yeast (Allinson) 1 x 7g sachet Easy Bake Yeast (Allinson)
50 grams Butter Melted
1 Happy Eggs Beaten Happy Eggs
225 ml JUST MILK Warmed JUST MILK
1 tbsp Desiccated coconut To Top

How to make Coconut Loaf

  1. Place all the ingredients into a mixer with a dough hook attached.
  2. Mix to a soft dough and knead for 5 minutes.
  3. If mixing by hand, put the dry ingredients into a bowl and sprinkle on the yeast. method tip
  4. Mix to a soft dough with the butter, egg and milk.
  5. Turn onto a floured board and knead for 10 minutes. Divide the dough into 3 ropes. method tip
  6. Plait the ropes into a braid and place into a greased 900g/2 lb loaf tin.
  7. Leave to prove until double in size. Preheat the oven to 190°C/fan 170°C/Gas Mark 5 method tip
  8. Brush with water, top with the coconut and bake for 30 minutes. method tip
