This lemon bread is fun to make and assemble. The bread is layers of little dough balls with a zesty topping.

Ingredients
| 700 grams | Allinson Premium Wholemeal Very Strong Bread Flour | ![]() |
| 1 tsp | Salt | |
| 100 grams | Sugar | |
| 225 ml | Milk warmed | |
| 50 ml | Water warmed | |
| 50 grams | Margarine | |
| 1 sachet | Allinsons Easy Bake Yeast 1 x 7g sachet | ![]() |
| 100 grams | Butter For the topping , Melted | |
| 3 grams | Lemon For the topping, Grated Rind Of | |
| 100 grams | Sugar For the topping |
Method

- Place the flour, salt, sugar, milk, water, margarine and yeast in a mixer with a dough hook.
- Mix into a soft dough, knead for 5 minutes.
- If mixing by hand knead for a further 5 minutes.
- Divide into 16 even sized pieces and roll into balls.
- Layer the balls into a greased 25.5 cm (10in) round tin, coating with the topping.
- Prove until double in size. Preheat the oven to 180°C/fan 160°C/gas mark 4
- Bake for 35 minutes.
