Ingredients

450 grams Allinson Strong White Bread Flour
1 tsp Sugar
1 tsp Salt
1 tsp Mixed Spice
50 grams Light Brown Sugar
100 grams Raisins
75 grams Currants
50 grams Mixed Peel
7 sachet Allinsons Easy Bake Yeast
1 Egg Beaten
75 grams Butter Melted
200 ml Milk Warmed
2 tbsp Runny Honey To Glaze

Method

  1. Place all of the ingredients (except the honey) into a mixer with a dough hook attached.
  2. Mix to a soft dough and knead for 5 minutes.
  3. If mixing by hand, put the dry ingredients into a bowl and sprinkle on the yeast. Mix to a soft dough with the egg, butter and milk. Knead on a floured board for 10 minutes.
  4. Shape into a large circle and place onto a greased baking sheet.
  5. Leave to prove until double in size. Preheat the oven to 190°C/fan 170°C/Gas Mark 5
  6. Bake for 30 minutes.
  7. Glaze with the honey and serve while still warm.
