Banana Bread Ingredients

1 tsp Baking Powder
110 grams Butter
225 grams Golden Caster Sugar (Billington's) Golden Caster Sugar (Billington's)
2 Free Range Eggs Free Range Eggs
3 Bananas
1 tsp Vanilla Extract (Nielsen Massey) Vanilla Extract (Nielsen Massey)
85 ml Natural Yoghurt

How to make Banana Bread

  1. Set the oven to 180°C / 160°C(fan) / Gas Mark 4.
  2. Line a 900g or 2lb loaf tin with baking parchment.
  3. Place both flours and the baking powder in a bowl.
  4. In a separate bowl, beat the butter and sugar until light and fluffy. Gradually beat in the eggs. method tip
  5. Mash the bananas well and add to the creamed mixture with the yoghurt, vanilla and flours. Beat lightly until just mixed.
  6. Spread the mixture in the lined tin and bake for 1 hour or until firm in the centre. method tip
  7. Allow to cool and serve sliced.
