Rocky Road Cake Ingredients

125 grams Butter unsalted
150 grams Dark Chocolate, broken into pieces
150 grams Milk Chocolate, broken into pieces
3 tbsp Golden Syrup (Silver Spoon) Golden Syrup (Silver Spoon)
100 grams Digestive biscuits roughly crushed
100 grams Brazil Nuts, roughly chopped
100 grams Mini marshmallows
Icing Sugar (Silver Spoon Homegrown) Icing Sugar (Silver Spoon Homegrown)

How to make Rocky Road Cake

  1. Line a 24 cm|9\" square baking tin with non-stick baking paper.
  2. Heat the butter, chocolate and golden syrup in a pan over a low heat until melted. Remove from the heat.
  3. Stir in the crushed biscuit pieces, nuts and marshmallows. Tip the mixture into the tin and smooth the top with a wet knife.
  4. Chill for about 2 hours until firm enough to cut into fingers. Sift a little icing sugar over the tops of the fingers.
