Rocky Road Fridge Cake Ingredients

100 grams Butter unsalted, plus extra for greasing
200 grams Milk Chocolate (Silver Spoon Create) broken into pieces Milk Chocolate (Silver Spoon Create)
200 grams chocolate chip cookies, lightly crushed
100 grams mini marshmallows (the coloured ones are the best)
100 grams Natural Glace Cherries (Billington's) Natural Glace Cherries (Billington's)
100 grams Sultanas golden

For the decoration:

extra marshmallows, cherries and Silver Spoon Cakecraft chocolate chips
35 grams White Chocolate (Silver Spoon Create) melted White Chocolate (Silver Spoon Create)

How to make Rocky Road Fridge Cake

  1. Grease an 18cm (7in) square baking tin with extra butter, and line, base and sides with baking paper.
  2. Melt the chocolate in a bain-marie. Melt the butter and mix into the melted chocolate, and leave to cool for 10 minutes. method tip
  3. Stir the crushed cookies, the mini marshmallows, cherries and sultanas into the cooled chocolate mix. Transfer to the prepared tin, press down and allow to cool, then chill for at least 2 hours until fully set.
  4. Once set, cover the top with a mixture of marshmallows, cherries and chocolate chips, and drizzle with melted white chocolate. When set once more, slice into 16 squares.
