Sticky Banana Poppyseed Loaf Ingredients

2 Bananas
2 tbsp Lemon Juice
175 grams Self Raising Flour (Allinson Nature Friendly) Self Raising Flour (Allinson Nature Friendly)
2.50 ml Baking Powder
175 grams Margarine
175 grams Golden Caster Sugar (Billington's) Golden Caster Sugar (Billington's)
1 tbsp Poppy Seeds
3 Free Range Eggs (Happy Eggs) large Free Range Eggs (Happy Eggs)
5 tbsp Toffee Treat (Askeys) Toffee Treat (Askeys)

How to make Sticky Banana Poppyseed Loaf

  1. Grease and base line a 900g (2lb) loaf tin.
  2. Peel the bananas and cut into large chunks.
  3. Place in a bowl with the lemon juice and mash using a potato masher.
  4. Sieve the flour and baking powder over the bananas then add the margarine, sugar, poppyseeds and eggs. Beat well using an electric hand whisk or wooden spoon. method tip
  5. Spread half the mixture into the tin then drizzle over 30ml (2tbsp) toffee treat. Spoon over the remaining mixture and level the surface.
  6. Bake in a preheated oven at 180°C, 350°F, gas mark 4 for about 40 minutes. Skewer the hot loaf all over. method tip
  7. Warm the remaining toffee treat and pour over the hot banana loaf. Leave to cool in the tin.
