Ingredients

1 tbsp Sunflower Oil
1 Medium Onion Finely Sliced
500 grams Allinson Premium Wholemeal Very Strong Bread Flour
1 tsp Cream of tartar
1 tsp Salt
1 tsp Bicarbonate of soda
1 tsp Caster Sugar
300 ml Milk
150 grams Natural yoghurt
1 tbsp Freshly chopped Sage
75 grams Cheddar Cheese Grated

Method

  1. Heat the oil in a pan, then fry the onion until soft and golden brown. Set aside. Pre-heat oven to 190°C/fan 170°C/Gas Mark 5.
  2. Mix together the flour, cream of tartar, salt, bicarbonate of soda and sugar in a large bowl and make a well in the centre.
  3. Whisk together the milk and yoghurt, then pour most of it into the well.
  4. Add the onion, sage and cheese and mix with a wooden spoon to give a soft but not wet dough, adding the remaining milk and yoghurt mixture, plus a little extra milk if necessary, if the dough is too stiff.
  5. Turn the dough out on to a lightly-floured surface and flatten into a round about 4cm (1½ inch) thick.
  6. Place on a greased baking sheet and cut a cross in the top using a floured knife.
  7. Bake in pre-heated oven for 45 minutes
  8. Slide the loaf off the baking sheet and wrap in a clean tea towel to keep it soft.
