Ciabatta Ingredients

50 grams Very Strong Bread Flour (Allinson Premium White) Very Strong Bread Flour (Allinson Premium White)
450 grams Strong White Bread Flour (Allinson) Strong White Bread Flour (Allinson)
2 tsp Golden Granulated Sugar (Billington's) Golden Granulated Sugar (Billington's)
1.50 tsp Salt
1.25 tsp Easy Bake Yeast (Allinson) Easy Bake Yeast (Allinson)
4 tbsp Olive Oil
285 ml Warm Water

4 tbsp bunch of fresh coriander, chopped

How to make Ciabatta

  1. Put the flour, sugar, salt and yeast into a bowl. method tip
  2. Mix to a soft dough with the oil and water.
  3. Turn onto a floured surface and knead for 10 minutes. method tip
  4. Divide the dough into two pieces.
  5. Stretch each piece into a rough circle about this size of a dinner plate and then fold like an envelope to give the traditional ciabatta shape.
  6. Place the loaves on a greased baking tray and leave covered with a tea towel until slightly risen. Preheat the oven to 200°C/fan 180°C/Gas Mark 6
  7. Dust liberally with flour and bake in an oven for 15-20 minutes until well risen and puffy. method tip
  8. Leave on a wire rack to cool.

"Excellent recipe! I have made two batches now, one with Allinson's Dried Active Yeast and one with white sourdough starter instead of the Easy Bake yeast, and with careful control of the amount of liquid both batches have produced lovely, rich, golden crusted bread. "
