This is a delicious rich moist chocolate cake with a fantasticly indulgent chocolate topping. For a special occasion, try decorating with chocolate dipped orange rind.

Ingredients

  • 150ml 5⅛ fl oz Sunflower oil
  • 150ml 5⅛ fl oz Yoghurt
  • 5tbsp 5tbsp Marmalade
  • 175g 6¼ oz Unrefined dark muscovado sugar (we use Billington's) Unrefined dark muscovado sugar
  • 3 3 Egg(s) (free range) medium
  • 225g 8 oz Self-raising white flour (we use Allinson) Self-raising white flour
  • 2tbsp 2tbsp Cocoa powder
  • 1tsp 1tsp Bicarbonate of soda

For the icing

  • 175g 6¼ oz Milk chocolate broken into pieces
  • 50g 1⅞ oz Butter (unsalted)

The Method Enter Bake mode

  1. Classic mode Step 1

    Preheat the oven to 170°C (150°C fan, gas mark 3). Grease and line an 8″ round deep cake tin.

  2. Classic mode Step 2

    Beat together the oil, yoghurt, marmalade, sugar and eggs in a large bowl. Sift together the dry ingredients and beat into the cake mixture.

    • 150ml 5⅛ fl oz Sunflower oil
    • 150ml 5⅛ fl oz Yoghurt
    • 5tbsp 5tbsp Marmalade
    • Unrefined light muscovado sugar
    • 3 3 Egg(s) (free range) medium
    • 225g 8 oz Self-raising white flour (we use Allinson) Self-raising white flour
    • 2tbsp 2tbsp Cocoa powder
    • 1tsp 1tsp Bicarbonate of soda
  3. Classic mode Step 3

    Spoon into the preared tin and bake for 1½-1¾ hours.

  4. Classic mode Step 4

    Cool in the tin for 10 minutes then turn out on to a wire rack to become cold.

  5. Classic mode Step 5

    Melt the chocolate and butter in a bowl over hot (not boiling) water and cool until thickened.

    • 50g 1⅞ oz Butter (unsalted)

    Spoon over the cake and spread with a knife to give a swirled effect.
