Ingredients

For the base

  • 300g 10⅝ oz Digestive biscuits
  • 75g 2¾ oz Butter (unsalted)

For the filling

  • 5 5 Lime zest finely grated
  • 5 5 Lime juice
  • 400g 14⅛ oz Condensed milk
  • 300ml 10⅛ fl oz Double cream

For the decoration

  • 3tbsp 3tbsp Chocolate curls

  1. Classic mode Step 1

    To make the base, place the biscuits in a plastic bag and bash with a rolling pin to make fine crumbs. Melt the butter in a pan and stir in the biscuits.

    • 300g 10⅝ oz Digestive biscuits
    • 75g 2¾ oz Butter (unsalted)
  2. Classic mode Step 2

    Press the mixture into a 20cm loose bottomed, greased flan tin and up the sides, pressing well with the back of a spoon.  Leave the base to chill in the fridge.

  3. Classic mode Step 3

    Using a zester, pare the rind from 1 lime into strips and set aside for the decoration. Grate the remaining lime zest and squeeze all the juice. Place the juice in a mixing bowl with the condensed milk and cream and whisk until thickened. Stir in the grated lime zest then spread the mixture into the biscuit base. Chill for at least 1 hour or overnight would be best, if time will allow.

    • 400g 14⅛ oz Condensed milk
    • 300ml 10⅛ fl oz Double cream
  4. Classic mode Step 4

    Decorate with the remaining lime zest and the chocolate curls.  This pie will keep for 2-3 days in the fridge or can be frozen.
