Ingredients

For the cake

  • 75g 2¾ oz Cocoa powder
  • 200ml 6⅞ fl oz Water boiling
  • 3tsp 3tsp Bicarbonate of soda
  • 4 4 Egg(s) (free range)
  • 370g 13⅛ oz Unrefined dark muscovado sugar Unrefined dark muscovado sugar
  • 180ml 6⅛ fl oz Sunflower oil
  • 1tsp 1tsp Vanilla extract (we like Nielsen-Massey) Vanilla extract
  • 275g 9¾ oz Self-raising white flour (we like Allinson) Self-raising white flour

For the decoration

  • 2tbsp 2tbsp Cocoa powder
  • 50g 1⅞ oz Butter (unsalted)
  • 2tbsp 2tbsp Golden syrup
  • 300g 10⅝ oz Unrefined golden icing sugar (we like Billington's) Unrefined golden icing sugar
  • Chocolate decorations

The Method Enter Bake mode

  1. Classic mode Step 1

    Preheat the oven to 180°C (160°C, 350°F, gas mark 4). Grease and line a 9″ x 12″ rectangular baking tin.

  2. Classic mode Step 2

    Mix the cocoa with the boiling water. Stir in the bicarbonate of soda and set aside to cool.

    • 3tsp 3tsp Bicarbonate of soda
  3. Classic mode Step 3

    Whisk the eggs, sugar, oil and vanilla in a mixing bowl until blended. Stir in the flour and the cocoa mixture until smooth.

  4. Classic mode Step 4

    Pour into the tin and bake for 30-40 minutes until risen and firm to the touch. Cool in the tin for 10 minutes, then turn out onto a wire rack to cool.

  5. Classic mode Step 5

    For the icing, melt the butter and golden syrup together with 1 tbsp water. Beat in the icing sugar, to make a smooth icing. Add a little extra boiling water if needed. Spread over the cool cake.

    • 2tbsp 2tbsp Golden syrup
    • 300g 10⅝ oz Unrefined golden icing sugar (we like Billington's) Unrefined golden icing sugar
  6. Classic mode Step 6

    Scatter with the sprinkles and chocolate sweets and leave to set.
