These are easy midweek baking, making good use of  delicious eating apples. Add a pinch of black pepper for a more grown up flavour to tingle the palate.

Ingredients

  • 250g 8⅞ oz Unrefined golden granulated sugar (we use Billington's) Unrefined golden granulated sugar
  • 150g 5⅜ oz Butter (unsalted) diced, softened
  • 3 3 Apple(s) finely chopped
  • 400g 14⅛ oz Self-raising white flour (we use Allinson) Self-raising white flour
  • 2tsp 2tsp Baking powder
  • Salt
  • 2 2 Egg(s) (free range) beaten
  • 100ml 3½ fl oz Milk (whole)
  • 100ml 3½ fl oz Sunflower oil
  • 1tbsp 1tbsp Unrefined golden granulated sugar for sprinkling (we use Billington's) Unrefined golden granulated sugar
  • 1tsp 1tsp Cinnamon for sprinkling

The Method Enter Bake mode

  1. Classic mode Step 1

    Pre heat the oven to 180°C  (170°C fan, gas mark 4). Line the muffin tin with muffin papers or grease and flour each hole.

    Take a tablespoon each of sugar and butter and melt over medium heat in a small pan. Add the apples and stir over heat for 2 minutes until slightly soft. Remove from heat.

    Mix together the flour, baking powder, sugar, salt and cinnamon. Rub in the remaining butter.

    Make a well in the middle and add the eggs, milk and oil. Stir all together until blended. Stir all together until blended. Stir in the apple.

    • 100ml 3½ fl oz Sunflower oil
  5. Classic mode Step 5

    Spoon the mix into the muffin tin and sprinkle with granulated sugar. Bake for 25 minutes, or until a skewer comes our clean when inserted into the middle. Cool on a rack. Store in an airtight container for up to 7 days.
