This delicious rum cake is bursting with flavour and will bring a real taste of the Caribbean to your home. This cake would work well as an alternative fruit or Christmas cake and can be topped with an icing of your choice or kept simple and enjoyed with a nice cup of tea.

Ingredients

  • 200g 7⅛ oz Unrefined light muscovado sugar (we use Billington's) Unrefined light muscovado sugar
  • 200g 7⅛ oz Plain white flour (we use Allinson) Plain white flour
  • 175g 6¼ oz Sultanas
  • 100g 3½ oz Pecan nuts toasted, chopped
  • 1tsp 1tsp Cinnamon ground
  • 1tsp 1tsp Nutmeg grated
  • 1tsp 1tsp Salt
  • 2tsp 2tsp Baking powder
  • 3 3 Banana(s) ripe
  • 4tbsp 4tbsp Rum dark
  • 3 3 Egg(s) (free range) beaten
  • 120g 4¼ oz Butter (unsalted)

The Method Enter Bake mode

  1. Classic mode Step 1

    Preheat the oven to 190°C (170°C fan, gas mark 5). Grease and line a 23 cm round cake tin. Toss the sultanas and pecans in 2 tablespoons of the flour.

    • 100g 3½ oz Pecan nuts toasted, chopped

    Cream the butter and sugar until light.

    Mash the bananas with the rum and gradually beat into the mixture.

    Beat in the eggs, a little at a time.

    Sift together the dry ingredients and fold into the mixture.

    • 1tsp 1tsp Salt
    • 2tsp 2tsp Baking powder
    • 200g 7⅛ oz Plain white flour (we use Allinson) Plain white flour

    Lightly stir in the sultanas and pecans.

    Cool in the tin for a few minutes then finish cooling on a wire rack.
