Ingredients

For the cakes

  • 250g 8⅞ oz Butter (unsalted) softened
  • 250g 8⅞ oz Unrefined golden caster sugar (we like Billington's) Unrefined golden caster sugar
  • 4 4 Egg(s) (free range)
  • 1tbsp 1tbsp Cocoa powder
  • 3tsp 3tsp Vanilla extract (we like Nielsen-Massey) Vanilla extract
  • 225g 8 oz Self-raising white flour (we like Allinson) Self-raising white flour
  • 5tbsp 5tbsp Milk
  • 2tsp 2tsp Tabasco sauce

For the decoration

  • 225g 8 oz Unrefined golden icing sugar (we like Billington's) Unrefined golden icing sugar
  • 85g 3 oz Butter (unsalted)
  • 2tbsp 2tbsp Milk (whole)
  • ½tsp ½tsp Vanilla extract (we like Nielsen-Massey)
  • 12 12 Cherries

The Method Enter Bake mode

  1. Classic mode Step 1

    Preheat the oven to 200°C (fan 180°C, gas mark 6). Line a cupcake tray with 12 cupcake cases.

    In a bowl, mix together the butter and sugar until it is smooth and creamy.

    Gradually add the eggs until they are all beaten in.

    Add the cocoa powder and vanilla. Then very gradually add all of the flour, before slowly mixing in the milk and Tabasco until it makes a smooth paste.

    • 3tsp 3tsp Vanilla extract (we like Nielsen-Massey)
    • 225g 8 oz Self-raising white flour (we like Allinson) Self-raising white flour
    • 2tsp 2tsp Tabasco sauce
  5. Classic mode Step 5

    Gradually fill each bun case up half way with the cake mixture and put them in the oven for 15-20 minutes until they are light brown.

  6. Classic mode Step 6

    Once the cakes are done take them out of the oven and place the trays on a wire rack to cool completely.

  7. Classic mode Step 7

    Make the buttercream by mixing together the icing sugar, butter, milk and vanilla extract.
