What flour to use

Always use Allinson Strong or Very Strong Bread Flours or speciality bread flours.

 

Bread flour has a high proportion of gluten (protein) which gives the bread structure.

 

Very strong Premium bread flours has a higher proportion of gluten giving a firmer texture. This flour is particularly good for richer doughs that contain extra fats sugar or fruits

 

Wholemeal bread flours will generally absorb more liquid than white flours, adjust your recipes accordingly.
