To marzipan and ice the top of a rich fruit cake

Draw around the cake tin onto a piece of baking parchment to make a template for the marzipan and icing circles.

Brush the top of the cake with apricot jam. Dust the work surface with a little icing sugar or cornflour. Roll the marzipan into a ball then roll into a circle the size of your paper circle and cut round it. Place the marzipan on the cake.  Brush the top of the cake with a little boiled alcohol.

 

Roll Ready To Roll icing into a smooth ball. Dust the work surface with a little icing sugar and roll out the icing to the size of your paper circle. Place the icing onto the marzipan and press down well.

 

Roll the icing trimmings into a  ball then re roll thinly. Cut out decorations and apply to the cake. If necessary, dampen your finger with water and brush the back of the decorations to moisten just a little to help them stick.
