When making jam by the Certo method it is most important to use a large saucepan or preserving pan.  To allow for a full rolling boil the pan be no more than one-third full when all ingredents are in.  Boiling given in the recipes are for full rolling boil.  DO NOT START TIMING UNTIL THIS STAGE HAS BEEN REACHED.  The full rolling boil must be maintained for the time stated in the recipe.  Please read all the instructions and hints following before commecing your jam making.
