Sugar

Always dissolve sugar on a low heat, stirring occasionally, before bringing to a full rolling boil.  This is important as sugar crystals may form on the jam. Jam will not set unless the correct amount of sugar is used. Perfect jam requires 60% of it\'s weight in sugar; in other words, every 10 lbs of jam should contain 6 lb of sugar.
