Ingredients

  • 225g 8 oz Unrefined molasses sugar (we use Billington's) Unrefined molasses sugar
  • 225g 8 oz Sultanas
  • 175g 6¼ oz Suet shredded
  • 225g 8 oz Raisins
  • 225g 8 oz Breadcrumbs
  • 100g 3½ oz Candied peel chopped
  • 110g 4 oz Apricot(s) dried, chopped
  • 1tsp 1tsp Nutmeg grated
  • 100g 3½ oz Prunes pitted, chopped
  • 1tsp 1tsp Cinnamon ground
  • 150ml 5⅛ fl oz Beer dark
  • 1tsp 1tsp Ginger (ground)
  • 4tbsp 4tbsp Rum
  • pinch pinch Cloves (ground)
  • 4 4 Egg(s) (free range) beaten

The Method Enter Bake mode

  1. Classic mode Step 1

    Place all the fruits in a large mixing bowl with the beer and rum, cover and leave to soak overnight.

    • 225g 8 oz Raisins
    • 100g 3½ oz Candied peel chopped
    • 110g 4 oz Apricot(s) dried, chopped
    • 100g 3½ oz Prunes pitted, chopped
    • 150ml 5⅛ fl oz Beer dark
    • 4tbsp 4tbsp Rum
  2. Classic mode Step 2

    Next day, stir in the rest of the ingredients, stirring well to combine.

    • 175g 6¼ oz Suet shredded
    • 225g 8 oz Breadcrumbs
    • 1tsp 1tsp Nutmeg grated
    • 1tsp 1tsp Cinnamon ground
    • 1tsp 1tsp Ginger (ground)
    • 4 4 Egg(s) (free range) beaten
  3. Classic mode Step 3

    Divide between 2 1.2 litre (2 pint) greased pudding basins (leaving room for the puddings to rise) and smooth the tops.

  4. Classic mode Step 4

    Cover with a lid or a double thickness of pleated greaseproof paper, then with a double thickness of pleated foil.

  5. Classic mode Step 5

    Tie securely and place in 1 or 2 large pans and pour in boiling water to come halfway up the basins.

    Cover and cook for 6 hours, topping up with boiling water as needed.

    Cool completely, then wrap in fresh greaseproof paper and foil.

    Store in a cool, dark place until needed. The puddings will keep for 3 months.

    To reheat simply steam the puddings for 2 hours.
