About the bake
This traditional apple cake is an old but reliable recipe, serve with clotted cream. Next time you could try omitting the apple and cinnamon and replace with chopped dates and walnuts.
Method
Step 1:
Heat oven to 180°C (fan 160°C, gas mark 4). Grease and line an 8in round cake tin.
Step 2:
Cream together the butter and sugar. Beat in the eggs, then gradually add the flour and baking powder and fold in with the liquid to a soft mixture. Pour into the tin and spread evenly.
Step 3:
Peel core trim, and cut the apples into quarters. Slice finely arrange on top of raw cake mix in rows.
Step 4:
Sprinkle top with sugar and cinnamon bake for 25-30 minutes (check after 25 minutes to ensure it isn't getting too browned). Slice into pieces and serve.

- 100g Unrefined demerara sugar
- 1 tsp Baking powder
- 50ml Water (or fruit juice to mix)

- 1 tbsp Unrefined demerara sugar
- 1 tsp Cinnamon

Really enjoyed this recipe. Where the juice content is missing in the recipe above, just use grated cooking apple, squeeze some of the juice out to make drier, and the cooking time needs extending to about 50mins.
