If like us you love doughnuts and muffins why not have the best of both worlds by combining the two to create these delicious apple doughnut muffins (otherwise known as duffins) Ideal for a coffee morning with friends or as a breakfast snack.

Ingredients

For the muffin

  • 225g 8 oz Plain white flour (we use Allinson)
  • 1¾tsp 1 .75tsp Baking powder
  • ½tsp .5tsp Salt
  • ½tsp .5tsp Nutmeg
  • 70g 2½ oz Butter (unsalted)
  • 120g 4¼ oz Unrefined golden caster sugar (we use Billington's)
  • 1 1 Apple(s) large, peeled, grated
  • 1 1 Egg(s) (free range)
  • 50ml 1¾ fl oz Milk (whole)

For the sugar mix

  • 80g 2⅞ oz Unrefined golden caster sugar (we use Billington's)
  • 1tbsp 1tbsp Cinnamon

The Method Enter Bake mode

  1. Classic mode Step 1

    Mix the dry ingredients together and cut in the butter using a knife.

    Ingredients for this step

    • 225g 8 oz Plain white flour (we use Allinson)
    • 1¾tsp 1 .75tsp Baking powder
    • ½tsp .5tsp Salt
    • ½tsp .5tsp Nutmeg
    • 70g 2½ oz Butter (unsalted)
  2. Classic mode Step 2

    Whisk the egg, milk and grated apple together.

    Ingredients for this step

    • 1 1 Egg(s) (free range)
    • 50ml 1¾ fl oz Milk (whole)
    • 1 1 Apple(s) large, peeled, grated
  3. Classic mode Step 3

    Mix the wet ingredients with the dry until just incorporated.

  4. Classic mode Step 4

    Pour the batter into a lightly greased mini muffin pan and bake at 190°C for 10-15 minutes until slightly golden.

  5. Classic mode Step 5

    Once baked dip the muffins in melted butter then roll in the cinnamon sugar mixture.
