Ingredients

  • 2 2 Lime(s)
  • 30g 1⅛ oz Unrefined golden icing sugar (we use Billington's)
  • 2tbsp 2tbsp Unrefined golden caster sugar (we use Billington's)
  • 8 8 Ice cubes
  • 80ml 2¾ fl oz Cachaca rum
  • Soda water
  • Ginger grated

The Method Enter Bake mode

  1. Classic mode Step 1

    Cut the ends off the lime and slice across to give you 1cm slices. Dust both sides of the lime slices with sugar and grill or BBQ over high heat, turning once, until lightly caramelized. Reserve a slice for serving on the side of the glass.

    • 30g 1⅛ oz Unrefined golden icing sugar (we use Billington's)
  2. Classic mode Step 2

    Muddle the lime wheels and ginger with the 2 tablespoons of sugar. Fill the glass with ice, add the cachaça and soda, if using, and stir well.

    • 80ml 2¾ fl oz Cachaca rum
