This is a classic smoky sticky BBQ sauce with a little spicy kick. Using Billington’s unrefined light muscovado and molasses sugar gives this BBQ sauce a really rich depth of flavour that makes it stand out from all of the rest. This makes around 475 ml of smoky sauce and tastes amazing smoothered on a brioche bun bacon cheeseburger. So what are you waiting for? Whip up a batch for your next BBQ.

Ingredients

  • 357g 12⅝ oz Tomato ketchup
  • 130g 4⅝ oz Unrefined light muscovado sugar (we use Billington's) Unrefined light muscovado sugar
  • 40g 1½ oz Unrefined molasses sugar (we use Billington's) Unrefined molasses sugar
  • 50ml 1¾ fl oz Cider vinegar
  • 50ml 1¾ fl oz Water
  • 1tbsp 1tbsp Worcestershire sauce
  • 2tsp 2tsp Tabasco sauce
  • 2tsp 2tsp Mustard powder
  • ½tsp .5tsp Cayenne pepper
  • 2tsp 2tsp Smoked paprika
  • 1tsp 1tsp Garlic powder
  • 1tsp 1tsp Sea salt fine
  • 1tsp 1tsp Black pepper ground
  • 2tsp 2tsp Water
  • 2tsp 2tsp Cornflour

  1. Classic mode Step 1

    In a bowl, mix the sugars and all the dry powders and spices together, with a fork, give this a good mix to ensure all the fine powders are distributed and there will be no small lumps of mustard or garlic powder in the sauce.

    • 130g 4⅝ oz Unrefined light muscovado sugar (we use Billington's) Unrefined light muscovado sugar
    • 40g 1½ oz Unrefined molasses sugar (we use Billington's) Unrefined molasses sugar
    • 2tsp 2tsp Mustard powder
    • ½tsp .5tsp Cayenne pepper
    • 2tsp 2tsp Smoked paprika
    • 1tsp 1tsp Garlic powder

    Place the ketchup, vinegar, water, Worcestershire sauce and Tabasco into a medium saucepan and add the sugar and spice mix, along with the salt and pepper.

    • 50ml 1¾ fl oz Cider vinegar
    • 2tsp 2tsp Water
    • 1tbsp 1tbsp Worcestershire sauce
    • 2tsp 2tsp Tabasco sauce
    • 1tsp 1tsp Sea salt fine
    • 1tsp 1tsp Black pepper ground
  3. Classic mode Step 3

    Bring to a gentle boil; stirring every so often to ensure the sugar is dissolving. Once this comes to boil, simmer for about 5 minutes. At this stage the sauce will be slightly runny. It makes a great marinade for chicken or ribs like this. To make it into a BBQ sauce for adding to BBQ burgers, add the corn flour and water to the sauce, stirring well, and continue heating until the sauce thickens, for about 2 minutes.

    Once cooled put into a container and store in the fridge until ready to slather onto your cheese and bacon burgers!
