Chocolate Truffles

About the bake

These truffles are really quick and easy to make, no baking required. Substitute the almond extract with rum or peppermint and decorate however you like.  Just be prepared if you have little helpers there will be some very messy hands and probably mouths to wipe!

Method

  1. Step 1:

    Melt the chocolate over a pan of simmering water.

  2. Step 2:

    Add the maderia cake crumbs and almond extract to the melted cake covering. Leave to cool slightly.

  3. Step 3:

    Shape the mixture in small balls.

  4. Step 4:

    Sprinkle the toppings of your choice onto saucers and roll the balls to cover. If you want to drizzle with melted cake covering, place the uncovered truffles onto a wire rack and dip a teaspoon into melted chocolate and drizzle backwards and forwards.

  5. Step 5:

    Chill for 30 mins and store in an airtight container.

Ingredients

  • For the truffles

    • 150g Milk chocolate (broken into chunks)
    • 130g Madeira cake (made into crumbs)
    • 1 tsp Almond extract
  • For the decoration

    •  Dark chocolate (grated)
    •  Chocolate sprinkles
    •  Sugar strands
