You just can’t beat a good homemade chocolate chip cookie – it’s the go-to favourite dessert for any occasion and for any age and our friends at Billington’s have shared this delicious chocolate chip cookie recipe with us.

The inclusion of the golden caster sugar gives them a warm golden colour and a buttery taste – Combine this with the unrefined light muscovado sugar which provides a creamy fudge taste and you can see why these cookies are mouth-wateringly good!

Ingredients

  • 135g 4⅞ oz Butter (unsalted)
  • 80g 2⅞ oz Unrefined golden caster sugar (we use Billington's) Unrefined golden caster sugar
  • 190g 6¾ oz Plain white flour (we use Allinson) Plain white flour
  • 100g 3½ oz Dark chocolate chips
  • 80g 2⅞ oz Unrefined light muscovado sugar (we use Billington's) Unrefined light muscovado sugar
  • 1 1 Egg(s) (free range) large
  • ½tsp .5tsp Vanilla extract (we use Nielsen-Massey) Vanilla extract
  • ½tsp .5tsp Salt
  • ½tsp .5tsp Bicarbonate of soda

The Method Enter Bake mode

  1. Classic mode Step 1

    Preheat the oven to 170 C (gas mark 3) and line 2 baking sheets with baking parchment.

    Cream together the butter and both sugars until pale then add the egg and vanilla extract and mix together well.

    Sift in the flour, salt and bicarbonate of soda and add to the butter sugar mixture and mix thoroughly until a dough forms, then stir in the chocolate chips.

    • 190g 6¾ oz Plain white flour (we use Allinson) Plain white flour
    • ½tsp .5tsp Salt
    • ½tsp .5tsp Bicarbonate of soda
    • 100g 3½ oz Dark chocolate chips
  4. Classic mode Step 4

    Break off pieces about 1 tablespoon in size and roll into balls.

    Place these on the baking sheet leaving about 5cm space in between them to allow for them spreading out during baking.

    Place in the oven and bake for 15-20 minutes or until the cookies are light golden brown.

    Leave to cool on the baking sheet for about 10 minutes then move to a wire rack to cool completely.
