Ingredients

For the rub

  • 25g 1 oz Unrefined light muscovado sugar (we use Billington's)
  • 2tsp 2tsp Chilli powder
  • 1tsp 1tsp Cayenne pepper
  • 2tsp 2tsp Salt
  • 2tsp 2tsp Black pepper
  • 2tbsp 2tbsp Mustard powder
  • 1tsp 1tsp Cinnamon
  • 2tsp 2tsp Cumin ground
  • 2tsp 2tsp Garlic powder
  • 2tsp 2tsp Smoked paprika

For the corn

  • 6 6 Corn cob
  • 50g 1⅞ oz Mayonnaise
  • 2tsp 2tsp Butter (unsalted)

The Method Enter Bake mode

  1. Classic mode Step 1

    Place everything into a bowl and mix through by rubbing the sugar and spices between your fingers and palms to break up any sugary lumps.

    • 25g 1 oz Unrefined light muscovado sugar (we use Billington's)

    • 1tsp 1tsp Cayenne pepper
    • 2tsp 2tsp Salt
    • 2tsp 2tsp Black pepper
    • 2tbsp 2tbsp Mustard powder
    • 1tsp 1tsp Cinnamon
    • 2tsp 2tsp Cumin ground
    • 2tsp 2tsp Garlic powder
    • 2tsp 2tsp Smoked paprika
  2. Classic mode Step 2

    Once your rub is well mixed, place it into a container ready to add to your BBQ food.

    To cook the corn – boil in salted water for 5 minutes. Once cooked, remove from the heat, place on a plate and allow to cool slightly, and for the steam and water to evaporate.

    Brush the warm corn with the mayo with a pastry brush, then dunk the corn into the spice mix to coat it will cling to the corn quite thickly, so just add a few strips of the rub onto the corn then using your fingers, rub this into the corn to distribute evenly.

    • 50g 1⅞ oz Mayonnaise
  5. Classic mode Step 5

    Place on the BBQ or in on griddle and cook until charred. Serve with lashings of butter.
