This recipe makes two 2 lb/1kg cakes….one to keep and one to gift….the perfect opportunity to share the pleasure of home baking!

  • 400g 14⅛ oz Unrefined light muscovado sugar (we use Billington's) Unrefined light muscovado sugar
  • 200ml 6⅞ fl oz Vegetable oil
  • 500g 17⅝ oz Courgette(s) unpeeled and grated
  • 350g 12½ oz Self-raising white flour (we use Allinson) Self-raising white flour
  • 350g 12½ oz Self-raising wholemeal flour (we use Allinson) Self-raising wholemeal flour
  • 1tsp 1tsp Salt
  • 1tsp 1tsp Baking soda
  • 3tsp 3tsp Cinnamon
  • 75g 2¾ oz Pecan nuts roughly chopped

The Method Enter Bake mode

  1. Classic mode Step 1

    Pre-heat the oven to 180°C (fan 160°C, gas mark 4). Grease and line 2 x 1kg (2lb) loaf tins.

  2. Classic mode Step 2

    In a large bowl, whisk the eggs until pale in colour and light in texture. Add the oil and grated courgette and beat until well mixed.

    • 500g 17⅝ oz Courgette(s) unpeeled and grated
  3. Classic mode Step 3

    Sift the flours, salt, baking powder and cinnamon together and then fold into the egg mixture along with the sugar. Gently fold in the chopped pecan nuts.

    Spoon the mixture into the prepared loaf tins and bake in the pre-heated oven for about one hour or until firm to the touch and a skewer inserted into the cake comes out clean.

  5. Classic mode Step 5

    Leave to cool in the tin for five minutes then turn out and cool in a wire cooling rack until completely cool.
