Fig, goats cheese and onion tartlets

These adorable little tartlets are ideal for a quick lunchtime bite, picnic or to serve at a special dinner party. The crisp filo pastry cases go beautifully with the classic combination of caramelised onions and goats cheese. Topped with a slice of fig and drizzle of honey – perfection!

Ingredients

For the pastry

  • 6 6 Filo pastry sheet(s)

For the filling

  • 1 1 Onion(s) large, finely chopped
  • 2tbsp 2tbsp Unrefined dark muscovado sugar (we use Billington's) Unrefined dark muscovado sugar
  • 50g 1⅞ oz Goats' cheese roulade
  • 110g 4 oz Butter (unsalted)

For the topping

  • 6 6 Figs Fresh
  • 1tbsp 1tbsp Honey for drizzling

The Method Enter Bake mode

  1. Classic mode Step 1

    Preheat oven to 180°C (fan 160°C, gas mark 4) Prepare two muffin tins.

  2. Classic mode Step 2

    In a large frying pan, melt a couple of knobs of butter, add the dark muscovado sugar and fry the onions on a low heat for approximately 20 minutes until caramelized.

    • 2tbsp 2tbsp Unrefined dark muscovado sugar (we use Billington's) Unrefined dark muscovado sugar
    • 30g 1⅛ oz Butter (unsalted)
    • 1 1 Onion(s) large, finely chopped
  3. Classic mode Step 3

    Melt the remaining butter and lightly brush over the pastry, before slicing into approximately 6cm squares.

    • 70g 2½ oz Butter (unsalted)
    • 6 6 Filo pastry sheet(s)
  4. Classic mode Step 4

    Double up the squares and push them into the holes in the muffin tin.

  5. Classic mode Step 5

    Before filling the pastry cases your will need to bake for 4 minutes in the oven or until golden.

    Once baked spoon in a layer of the fried onions, top with some goats cheese and pop back in the oven for a few minutes until the cheese begins to melt (be careful not to let the pastry burn).

    Remove the tartlets from the oven and chop the figs into quarters.

    Finish the tartlets with a slice of fig and a drizzle of honey if liked.
