For the Pancake Pops

  • 1 1 Sweetpea Pantry Grainy Brainy Pancake Mix packet
  • 1 1 Egg(s) (free range)
  • 200ml 6⅞ fl oz Coconut milk use any milk you like; almond, oat or cows are more options

The Method Enter Bake mode

  1. Classic mode Step 1

    In a large bowl, whisk your egg until light and fluffy, then whisk in your milk. Add your Sweetpea Pantry mix into the egg and milk mix, whisking until combined.

  2. Classic mode Step 2

    Heat your frying pan to a medium heat and add a little butter or coconut oil. Use a small cup or large spoon to pour the mixture into the pan; your pancakes should be around 1 1/2 inches-2 inches wide.

    Flip over once the bubbles start to appear, cooking on the second side until brown. Once slightly cooled press lollipop sticks into your pancakes to create your pops.

    Serve with some natural syrup to dip and some fresh fruit.
