The ‘Rocky Road’ was first invented in 1853 in Australia as a way of on-selling
confectionery that had been spoiled by the long journey from Europe. Here they’ve been made into delightful little Christmas puddings.

Ingredients

  • 120g 4¼ oz Plain white flour (we use Allinson) Plain white flour
  • 25g 1 oz Cocoa powder
  • 1½tsp 1 .5tsp Baking powder
  • Salt
  • 70g 2½ oz Unrefined light muscovado sugar (we use Billington's) Unrefined light muscovado sugar
  • 60g 2⅛ oz Glacé cherries finely chopped
  • 25g 1 oz Mini marshmallows roughly chopped
  • 50g 1⅞ oz Milk chocolate chips
  • 1 1 Egg(s) (free range) large
  • 1tsp 1tsp Chocolate extract (we use Nielsen-Massey) Chocolate extract
  • 100ml 3½ fl oz Milk (whole)
  • 3tbsp 3tbsp Sunflower oil

For the topping

  • 150g 5⅜ oz White chocolate chips
  • Silver balls and mini holly leaves to decorate

The Method Enter Bake mode

  1. Classic mode Step 1

    Preheat the oven to 200C (fan 180C, gas mark 6). Place mini muffin cases in 2 x 12 hole mini muffin tins.

  2. Classic mode Step 2

    In a large bowl sieve together the plain flour, cocoa powder, baking powder and salt.

    • 1½tsp 1 .5tsp Baking powder
    • Salt
  3. Classic mode Step 3

    Stir in the sugar, cherries, marshmallows and milk chocolate chips.

    • 60g 2⅛ oz Glacé cherries finely chopped
    • 25g 1 oz Mini marshmallows roughly chopped
    • 50g 1⅞ oz Milk chocolate chips
  4. Classic mode Step 4

    In a jug whisk together the egg, extract, milk and oil.

    • 1 1 Egg(s) (free range) large
    • 1tsp 1tsp Chocolate extract (we use Nielsen-Massey) Chocolate extract
    • 100ml 3½ fl oz Milk (whole)
    • 3tbsp 3tbsp Sunflower oil
  5. Classic mode Step 5

    Pour the wet ingredients into the dry ones and gently mix until just combined, don’t over mix.

  6. Classic mode Step 6

    Spoon or pipe the mixture between the muffin cases and bake for 15 minutes. Remove from the tin immediately and cool on a wire rack. When cool, peel the cases away from the muffins and discard.

  7. Classic mode Step 7

    Melt the white chocolate and drizzle over the top of the cooled muffins to look like white sauce on a Christmas pudding. Top each with either the holly and berry sprinkles or silver balls.
