Bacon and spinach marry together wonderfully in this savoury loaf which has the added bonus of being topped with cheddar cheese.  

Method

  1. Fry the bacon and onion for 5 minutes. Allow to cool and cut up the bacon into small pieces.

  2. Place all of the ingredients (except cheddar cheese) into a mixer with a dough hook attached. If mixing by hand put the flour, bacon, onion, spinach, sugar, salt and nutmeg into a bowl. Add the yeast and mix to a soft dough with the water and oil.

  3. Mix to a soft dough and knead for 5 minutes or 10 minutes if you have mixed by hand.

  4. Shape into a round loaf and score into 8 sections.

  5. Cover with oiled cling film and leave to prove in a warm place until doubled in size. Meanwhile preheat the oven to 220°C (fan 200°C, gas mark 7).

  6. Sprinkle the loaf with the grated cheese and place in the oven, reducing the temperature to 200°C (fan 180°C, gas mark 6). Bake for 25-30 mins or until the loaf sounds hollow when the bottom is tapped.

  7. Leave to cool and enjoy.
