This blueberry and lemongrass compote is absolutely gorgeous, why don't you try and have a go and impress your friends!

Method

  1. Halve the lemongrass lengthways and bruise with a rolling pin so the flavours are released during cooking.

  2. Put the sugar, blueberries, lemongrass and water in a saucepan and cook over a low heat until the blueberry colour begins to run and the sugar has dissolved.

  3. Remove from the heat and allow to cool. Remove the lemongrass.

  4. Spoon the yoghurt into four dishes and top with the compote to serve.
