This tray bake is a perfect bake to serve warm as a pudding with a scoop of ice-cream. Why not sprinkle on some flaked almonds or add a pinch of ground cinnamon to the flour?

Method

  1. Pre-heat the oven to 180°C (gas mark 4). Grease a shallow baking tin 28x18x4cm (11x7x1½).

  2. Mix the flour, oats and sugar in a bowl. Rub in the butter until the mixture resembles bread crumbs.

  3. Evenly spread half the mixture over the base and gently press.

  4. Spread the cherries over the oaty base. Cover with the remaining oat mixture and press down.

  5. Bake for 25 minutes until golden brown.

  6. Leave to cool in the tin. Cut into 12 piece and serve.
