This cinnamon roll recipe is really simple and perfect for a Sunday afternoon relaxing with a hot drink. Method In a large bowl combine the flour, yeast and salt. In a small microwavable bowl combine the sugar, butter, water and milk then heat in the microwave until the mixture has warmed and the butter is almost melted. (Approximately 1 1/2 minutes) Gradually add the milk mixture into the flour and mix with the egg until a soft and sticky dough forms. Preheat the oven to 200°C (180°C fan, gas mark 6) Knead the dough, by hand on a floured surface or 5 minutes in a mixer with a dough hook until the dough becomes elastic. Cover the dough with cling film and leave it to rest for 5 minutes. Once the dough has rested, roll it out on a lightly floured surface until it measures a 16x9 inch rectangle. Prepare the filling by combining all of the ingredients in a small mixing bowl, except for the butter. Spread the butter over the top of the rolled dough, then top with the filling distributing it evenly. Tightly roll the dough, horizontally to form a long roll. Cut into 12 even portions and place into a lightly greased 9x13 baking tin. Turn off your oven, cover your baking tin with foil and place inside your oven to prove for 25 minutes. Once proved, removed from the oven and preheat once again to 190°C (170°c, gas mark 5) Remove the foil from the tin and bake the cinnamon rolls for 15-18 minutes or until they become golden brown. Remove from the oven and allow to cool for a few minutes before icing. Prepare the icing by combining all of the ingredients in a small mixing bowl and beating until smooth, drizzle over the top of the rolls and serve.
