Make cocktail night even more special with these yummy cosmopolitan cocktail cupcakes. Great for a night in with the girls or a cheeky hen night treat.

Method

  1. Preheat the oven to 170°C (150°C, gas mark 3) and place 12 cupcake cases in a cupcake or muffin tin.

  2. Place the butter, flour, sugar and baking powder into a large bowl and using a hand held or freestanding electric mixer, slowly mix together until it resembles breadcrumbs.

  3. Mix together the eggs, orange & lime juice, and milk in a jug then gradually add to the bowl. After mixing thoroughly, spoon the mixture into the cases until they are about 2/3 full.

  4. Bake in the oven for 25 minutes or until the cakes are golden brown and a skewer comes out clean.

  5. To make the frosting, mix together the butter and icing sugar until it resembles breadcrumbs in texture, then add the milk and vodka and mix on a high speed until the frosting is soft and fluffy.

  6. Decorate the cupcakes with frosting using either a piping bag or palette knife and finish with a raspberry on a cocktail stick.
