These delicious savoury muffins are a great way start to the day. They also make a nice lunchtime treat.

Method

  1. Preheat the oven to 200°C (fan 180°C, gas mark 4). Line a 12 hole muffin tin with muffin cases.

  2. Place all the ingredients except 60g of the cheese in a mixing bowl and mix until just blended.

  3. Spoon the mixture into the muffin cases and sprinkle with the remaining cheese.

  4. Bake for 20 minutes.

  5. Remove from the oven and allow to stand for 5 minutes before removing from the tin. Best served warm.
