Sweetpea Pantry have created a wonderful pancake mixture containing buckwheat and flax. Not only are these pancakes sugar free, they are gluten free too! Method

In a large bowl whisk your egg until light and fluffy, then whisk in your milk. Add your sweetpea Pantry mix into the egg and milk mix, whisking until combined.

Heat your frying pan to a medium heat and add a little butter or coconut oil. Use a small cup or large spoon to pour the mixture into the pan; your pancakes should be around 4" inches wide.
Flip over once the bubbles start to appear, cooking on the second side until brown.

Stack your pancakes and add a drizzle of golden syrup and some fresh blueberries to serve.
