This pineapple with rum sauce is so tasty and makes the perfect dessert for any BBQ.  

Method

  1. On the hob, slowly melt the caster sugar in a pan over a medium heat until dark amber. Take off the heat and carefully add the orange juice and rum, Return to the heat and stir until the caramel melts again. Cool and set aside until needed.

  2. Cut the pineapple into quarters, dip each cut side in caster sugar. Cook over a hot barbecue until just golden. Serve with the rum sauce poured over. Delicious with ice cream
