Pork chops in sticky plum marinade

This marinade would also be perfect with chicken or duck.

Method

  1. Place the jam, molasses, soy sauce, orange zest and juice, ginger, garlic, and spring onions in a small pan. Heat until the molasses and jam is dissolved. Stir and leave to cool completely. Add the coriander.

  2. When completely cooled, pour into a shallow bowl and add the pork chops. Marinade for 30 minutes.

  3. Heat a griddle until smoking (could also be cooked on the barbecue) and add the pork chops and cook for for 6-8 minutes, then turn them over and cook for a further 8-10 minutes, brushing regularly with the marinade. Cook until the chops are thoroughly cooked, the juices run clear and there is no pink meat. Serve with a mixed salad and potato wedges.
