This delicious loaf is simple to make and perfectly compliments a warm cup of tea.

Method

  1. Place all the ingredients (except the raisins) into a mixer with a dough hook attached.

  2. Mix to a soft dough, knead for 5 minutes. If mixing by hand, knead for a 10 minutes.

  3. Roll the dough on a floured surface to a 30 x 23cm (12 x 9in) rectangle.

  4. Sprinkle with raisins and roll up like a swiss roll.

  5. Place seam side down into a 1.1kg (2½ lb) loaf tin, leave to prove until double in size. Preheat the oven to 190°C (170°C fan, gas mark 5).

  6. Bake for 35 minutes.
