This sponge cake is so easy to make and is really versatile too. You can make it how the recipe suggests with the sultanas and spices or adapt it to your preferred flavour by adding a few drops of flavoured extract or different dried fruit.

Method

  1. Pre-heat oven to 200°C (fan 180°C, gas mark 6). Grease a large loaf tin with butter.

  2. Cream the butter, then add the sugar and beat until fluffy.

  3. Beat the eggs together in a jug and add to the sugar/ butter. Beat together until smooth.

  4. Add the mixed spice and cinnamon and stir together. Add the flour and mix until smooth.

  5. Dust the sultanas in a bowl with about 1 tbsp of flour until all the fruit is well coated. Add the fruit to the mixture and stir in.

  6. Pour the mixture into the tin and bake for 45 minutes. Test with a skewer, if still sticky in the middle bake for 5 more minutes or just until the skewer comes out clean. Dust with icing sugar before serving.
