Egg(s) (free range) (medium, beaten)

Milk (semi-skimmed)

Chives (fresh, chopped)

Courgette(s) (coarsely grated)

These delicious savoury muffins are a great way start to the day. They also make a nice lunchtime treat.

Courgette and chive muffins 

Preheat the oven to 200°C (fan 180°C, gas mark 4).&nbsp;Line a 12 hole muffin tin with muffin cases.

Place all the ingredients except 60g of the cheese in a mixing bowl and mix until just blended.

Spoon the mixture into the muffin cases and sprinkle with the remaining cheese.

Remove from the oven and allow to stand for 5 minutes before removing from the tin. Best served warm.
