About the bake

These reduced calorie double chocolate muffins are a real treat. A delicious snack to enjoy with a tea or coffee.

Method

  1. Step 1:

    Preheat oven to 160°C. Grease a muffin baking tin; you can also use muffin papers.

  2. Step 2:

    In a bowl mix the eggs, Truvia, vanilla, oil and milk. Add the cocoa powder, coconut flour, baking powder and 70g of the chocolate chips. Mix well until incorporated.

  3. Step 3:

    Fill each cupcake hole with the mixture until ¾ full and top each muffin with the remaining dark chocolate chips.

  4. Step 4:

    Bake for 20-25 minutes or until a cake tester comes out clean, remove from oven and let the muffins cool completely in the baking pan, when they are cool, remove from the pan.

    • 3 Large free range egg(s)
    • 20g Truvia calorie free sweetener
    • 65ml Milk
    • 20g Cocoa
    • 35g Coconut flour
    • 2 tbsp Olive oil
    • 1 tsp Nielsen-Massey Vanilla Extract
    • 1 tsp Baking powder
    • 100g Dark chocolate chips
