This reduced calorie beetroot relish is an ideal accompaniment to a plate of cheese and crackers. 

Method

  1. Place all ingredients into a medium sized saucepan and stir over a medium heat until the honey dissolves.

  2. Bring to the boil and reduce to a simmer, cook for about 20 minutes until most of the liquid has evaporated and you are left with a chutney style mixture.

  3. Taste for seasoning and adjust if necessary.

  4. Store in an airtight container and consume within 72 hours.

    this is a lovely relish but I found the sweetener's to expensive so just used brown sugar but when I cooled it down before putting In the jars it stuck to the bottom of the pan so had to heat it again to loosing it but I would recommended making this
