Method

  1. Step 1:

    Put all the fondue ingredients in a saucepan set over a high heat and boil for approximately 4-5 minutes, stirring regularly, until it has thickened.

  2. Step 2:

    Thread the fruits on wooden skewers. Sprinkle with caster sugar and grill on the barbecue for about 3-4 minutes until just scorched and tender. Toast the brioche for a few seconds each side on the bbq and serve with the fruit and toffee sauce.

Ingredients

  • For the toffee fondue

    • 50g Butter (unsalted)
    • 125g Billington's Unrefined Light Muscovado Sugar
    • 150g Golden syrup
    • 100ml Double cream
    • 0.5 tsp Nielsen-Massey Vanilla Extract
  • For the sides

    • 200g Strawberries
    • 2 Peach(es) (sliced)
    • 0.5 Pineapple (cut into chunks)
    • 3 tbsp Billington's Unrefined Golden Caster sugar
    • 4 Brioche (slices)
