This traditional shortbread is baked using Silver Spoon Stevia Blend Caster Sugar. The stevia blend means the calorie intake is reduced by 1/3 without compromising on taste or texture. These are flavoured using Nielsen Massey vanilla extract, or choose lemon extract for a tasty alternative.

Ingredients

For the shortbread

  • 300g 10⅝ oz Plain white flour (we use Allinson) Plain white flour
  • 200g 7⅛ oz Butter (unsalted) at room temperature
  • 66g 2⅜ oz Stevia blend caster sugar (we use Silver Spoon) Stevia blend caster sugar
  • 1tsp 1tsp Vanilla extract alternatively, use lemon extract (we use Nielsen-Massey) Vanilla extract

The Method Enter Bake mode

  1. Classic mode Step 1

    Preheat the oven to 180’c and grease a baking sheet.

    Sift together the flour a into a bowl.

    Beat the butter and Stevia blend until soft. Add a few drops of vanilla (or lemon) extract and  then add the sifted flour. Bring together to form a dough.

    • 100g 3½ oz Butter (unsalted) at room temperature
    • 33g 1¼ oz Stevia blend caster sugar (we use Silver Spoon) Stevia blend caster sugar
    • 1tsp 1tsp Vanilla extract alternatively, use lemon extract (we use Nielsen-Massey) Vanilla extract
  4. Classic mode Step 4

    Roll the dough out to about 1cm thickness and cut into rectangles (Or any shape you like) . Carefully transfer the rectangular fingers to the baking tray.

  5. Classic mode Step 5

    Bake for 15 minutes. When golden, remove from the oven and leave to cool on a cooling rack. Sprinkle with stevia blend for decoration.
