If you find your cupcakes have little pointy tops, try turning the oven down a little next time. ┬áIf you want flat cakes to flood with fondant icing, don’t fill the cup cake cases quite so deeply. Divide the mixture between about 14-15 cupcake cases instead of 12, then you should have shallower cakes with enough of the case above the surface so you can flood easily with icing. If your cakes are too domed, try cooling them with a baking tray placed on top to flatten them slightly.
