If you want to freeze your loaf/rolls so that they are par-baked, bake for half the specified bake time (until the bread is holding it’s own shape) then remove from the oven, cool and freeze wrapped in double layers of cling film. ¬†When you are ready to bake the rolls/loaf, take from the freezer and bake for the remaining time in the oven. If you have made bread rolls it is a good idea to wrap and freeze each roll individually so that you can just bake the amount of rolls that you require.
