Fresh yeast is typically quite difficult to locate in stores and mostly used by commercial bakers. It can be purchased in a block and has a similar consistency to putty. You use this yeast by creaming together the yeast and sugar in a bowl using the back of a spoon until the yeast starts to dissolve. You will notice the crumbly yeast will turn into a smooth liquid after approx 30 seconds. You will then need to add water to the yeast, using the amount specified in your recipe.
